Preparation
- Preheat Oven to 160C Heat oil in a large pan, add the pork and chorizo to the pan and cook for 3 to 4 minutes until all the meat is browned. Add the garlic and mushrooms to the pan and cook for a further 3-4 minutes Add the 2 tins of chopped tomatoes and paprika Stir the contents of the pan Transfer all of the contents of the pan into an oven proof dish Add the peppers if required Sprinkle the pork stock cube across the top of the contents of the dish and gently stir/ fold it into the contents Cover the dish with aluminium foil Place the dish in the oven for 1- 1.5 hours until the pork is tender. Remove the aluminium foil for the last 20 minutes of cooking. Remove from oven and carefully stir in the Greek yoghurt and sprinkle with parsley if required. If required, sprinkle a little paprika over the top of the dish Can be served simply with mashed potatoes .
